Keto Moroccan Msemmen (Folded Flatbreads)
A low-carb twist on the traditional Moroccan layered flatbread, made with almond flour and mozzarella for a soft, chewy texture that’s perfect for breakfast, snacks, or serving with savory dishes.
Ingredients
For the Dough
- 2 cups almond flour
- 1 cup shredded mozzarella cheese
- 2 oz cream cheese
- 1 large egg
- 1 tsp baking powder
- ½ tsp xanthan gum (optional, for elasticity)
- ¼ tsp salt
For Layering
- 3 tbsp melted butter
- 1 tbsp olive oil

Instructions
Step 1: Prepare the Dough
- In a microwave-safe bowl, combine mozzarella and cream cheese.
- Microwave for 60–90 seconds, stirring halfway, until melted and smooth.
- Add egg and mix quickly.
- Stir in almond flour, baking powder, xanthan gum, and salt.
- Knead until a soft dough forms.
Step 2: Divide the Dough
- Divide dough into 4 equal portions.
- Place each piece between two sheets of parchment paper.
- Roll into thin squares about 6–7 inches wide.
Step 3: Create the Layers
- Brush each square lightly with melted butter and olive oil.
- Fold the left and right sides toward the center.
- Fold the top and bottom toward the center to create a layered square packet.
- Gently flatten with your hands.
Step 4: Cook the Msemmen
- Heat a non-stick skillet over medium heat.
- Brush lightly with butter.
- Cook each folded flatbread for 3–4 minutes per side until golden brown and cooked through.
- Repeat with remaining dough.
Step 5: Serve
- Brush warm msemmen with a little extra melted butter.
- Serve immediately.
Tips
- If the dough becomes sticky, chill it for 10 minutes before rolling.
- Roll gently to maintain the flaky layers.
- For a savory version, add 1 teaspoon garlic powder and 1 teaspoon dried herbs to the dough.
- Store leftovers in the refrigerator for up to 3 days and reheat in a skillet.
