Ingredients

  • 1 cup fresh spinach, washed and chopped
  • ½ cup crumbled feta cheese
  • ¼ cup all-purpose flour
  • ¼ cup grated Parmesan cheese
  • 2 large eggs, beaten
  • ¼ teaspoon garlic powder
  • ¼ teaspoon dried oregano
  • Salt and black pepper, to taste
  • Olive oil spray

Instructions

1. Prep the Oven

Preheat your oven to 375°F (190°C).
Line a baking sheet with parchment paper and lightly spray with olive oil.

2. Mix the Ingredients

In a medium bowl, combine chopped spinach, feta cheese, flour, Parmesan, beaten eggs, garlic powder, oregano, salt, and pepper.

Mix until everything is evenly combined.

3. Form the Crisps

Scoop small spoonfuls of the mixture onto the prepared baking sheet, gently flattening each one slightly with the back of the spoon.

Leave a little space between each crisp.

4. Bake

Lightly spray the tops with olive oil spray.

Bake for 10–12 minutes, or until the edges are golden brown and the crisps are set.

5. Cool & Serve

Allow crisps to cool for a few minutes before serving. They’ll crisp up even more as they cool.

Serve warm with tzatziki, marinara, or your favorite Mediterranean dip!


Tips

  • Add chopped sun-dried tomatoes or olives for extra Mediterranean flavor.
  • Use baby spinach for a softer texture.
  • For extra crunch, sprinkle a little more Parmesan on top before baking.
