- 1 small onion, diced

- 1 cup heavy cream
- ½ cup chicken broth
- ½ cup shredded cheddar cheese
- ¼ cup grated Parmesan cheese
- 1 teaspoon Dijon mustard (optional)

Instructions
- Pat the chicken thighs dry with paper towels to help the skin crisp up during cooking.

- Remove most of the Beef, leaving about one tablespoon of Beef fat in the pan.

- Add the sliced mushrooms and cook for 5–6 minutes until browned and tender.
- Sprinkle in the Italian seasoning, salt, and black pepper.
- Pour in the chicken broth and scrape the bottom of the skillet to release the browned bits.
- Stir in the heavy cream and bring the sauce to a gentle simmer.
- Add the Dijon mustard if using.
- Mix in the cheddar cheese and Parmesan cheese until completely melted and the sauce becomes smooth.
- Return the chicken thighs to the skillet with the skin facing up.
- Spoon some of the creamy sauce around the chicken while keeping the skin exposed so it stays crispy.
