Ingredients

For the Phyllo Cups

  • 12 sheets phyllo dough, thawed
  • 3 tablespoons melted butter or olive oil

For the Filling

  • 5 oz fresh spinach, chopped and sautéed
  • 4 oz feta cheese, crumbled
  • 4 oz cream cheese, softened
  • 1 egg
  • 2 cloves garlic, minced
  • ¼ cup sun-dried tomatoes, chopped
  • ¼ cup grated parmesan cheese
  • ¼ teaspoon nutmeg (optional)
  • Salt and black pepper, to taste

Garnish

  • Fresh parsley, chopped

Instructions

Step 1: Prepare the Oven

Preheat oven to 375°F (190°C). Lightly grease a muffin tin.

Step 2: Make the Phyllo Cups

Lay one sheet of phyllo dough on a clean surface and brush lightly with melted butter or olive oil. Layer 3 sheets together. Cut into squares large enough to fit muffin cups.

Press layered phyllo squares gently into muffin tin cavities to create cups. Repeat with remaining phyllo sheets.

Step 3: Prepare the Filling

In a mixing bowl, combine sautéed spinach, feta cheese, cream cheese, egg, garlic, sun-dried tomatoes, parmesan cheese, nutmeg, salt, and black pepper. Mix until creamy and well combined.

Step 4: Fill the Cups

Spoon the filling evenly into each phyllo cup.

Step 5: Bake

Bake for 18–22 minutes or until the phyllo is golden brown and crisp and the filling is set.

Step 6: Garnish & Serve

Allow to cool slightly. Garnish with fresh parsley before serving.

Tips

  • Keep phyllo dough covered with a damp towel while working to prevent drying out.
  • Add chopped olives or pine nuts for extra Mediterranean flavor.
  • These can be assembled ahead and baked just before serving.
