These fresh and colorful Greek-inspired skewers are the perfect quick appetizer, party snack, or light summer bite. Crisp cucumber, creamy feta, and juicy cherry tomatoes come together with simple Mediterranean flavors in every bite.

Ingredients

For the Skewers

  • 1 large cucumber, cut into thick half-moon slices
  • 6 oz feta cheese, cut into small cubes
  • 1 cup cherry tomatoes
  • ½ cup pitted Kalamata olives
  • Fresh parsley or basil leaves (optional)
  • Small skewers or toothpicks

For the Dressing

  • 2 tbsp olive oil
  • 1 tbsp fresh lemon juice
  • ½ tsp dried oregano
  • ¼ tsp garlic powder
  • Salt and black pepper, to taste

Instructions

1. Prepare the Ingredients

Wash and dry the cucumber and cherry tomatoes.

Cut cucumber into thick half-moon slices and feta into bite-sized cubes.

2. Assemble the Skewers

Thread onto each skewer:

  • 1 cucumber slice
  • 1 feta cube
  • 1 cherry tomato
  • 1 olive
  • Fresh herb leaf if using

Repeat until all ingredients are used.

3. Make the Dressing

In a small bowl, whisk together olive oil, lemon juice, oregano, garlic powder, salt, and pepper.

4. Finish & Serve

Drizzle the dressing lightly over the skewers just before serving.

Serve chilled or at room temperature.
