Ingredients:

For the vegetables:

1 pound fresh green beans, trimmed

2 large yellow onions, thinly sliced

3 cloves garlic, minced

2 tablespoons butter

2 tablespoons olive oil

Salt and pepper to taste

For the seasoning:

1 tablespoon balsamic vinegar

1 teaspoon fresh thyme

1/4 cup fresh parsley, chopped

1 teaspoon sugar (optional, helps onions caramelize)

1/2 teaspoon red pepper flakes (optional)

Instructions:

1. Caramelize onions:

Heat butter and oil in large skillet

Add sliced onions and sugar

Cook on medium-low for 25-30 minutes, stirring occasionally

Add garlic in last 2 minutes

2. Prepare green beans:

Bring pot of salted water to boil

Blanch green beans for 3-4 minutes

Ice bath to stop cooking

Drain well

3. Combine:

Add blanched beans to caramelized onions

Toss with balsamic vinegar

Season with salt and pepper

Add thyme and red pepper flakes

4. Finish:

Heat through for 2-3 minutes

Garnish with fresh parsley

Serve immediately
