8 spring roll wrappers

8 mozzarella cheese sticks (cut in half if large) or 2 cups shredded mozzarella

½ cup shredded cheddar cheese

2 tablespoons cream cheese, softened (optional, for extra creaminess)

1 teaspoon garlic powder

1 teaspoon Italian seasoning

½ teaspoon paprika

2 tablespoons chopped fresh parsley

1 egg, beaten (for sealing)

Cooking spray or olive oil spray

Optional Dipping Sauces

Instructions

Prepare the Filling

In a bowl, combine:

Mozzarella

Cheddar cheese

Cream cheese

Garlic powder

Onion powder

Italian seasoning

Paprika

Chopped parsley

Mix until well combined.

Assemble the Rolls

Lay a spring roll wrapper on a clean surface with one corner facing you.

Place 2–3 tablespoons of the cheese filling near the bottom corner.

Fold the bottom corner over the filling, then fold in both sides.

Roll tightly toward the top corner.

Brush the top corner with beaten egg and seal tightly.

Repeat with the remaining wrappers.

 Preheat the Air Fryer

Preheat your air fryer to 375°F (190°C) for 3 minutes.

 Air Fry

Lightly spray both sides of the cheese rolls with cooking spray.

Arrange them in a single layer in the air fryer basket, leaving space between each roll.

Air fry for 8–10 minutes, turning halfway through, until golden brown and crispy.

If needed, cook for an additional 1–2 minutes for extra crispiness.

 Serve

Let the cheese rolls cool for 2–3 minutes before serving, as the filling will be very hot.

Serve with marinara, ranch, garlic aioli, or sweet chili sauce.

Tips

Freeze the assembled rolls for 10 minutes before air frying to help prevent cheese from leaking.

Avoid overfilling the wrappers.

Keep unused spring roll wrappers covered with a damp towel to prevent them from drying out.

Experiment with different cheeses such as pepper jack, Monterey Jack, gouda, or provolone.
